I apologize for taking so long to blog.  It was my turn to host Thanksgiving this year and life has been a little busy.  It’s that wonderful time of the year! 

Well, I hope you all had a wonderful Thanksgiving and you were able to spend quality time with family and friends.  I have to say that I had a fantastic holiday and had plenty to give “thanks” for.  On Thanksgiving day we hosted dinner for my side of the family.  So needless to say there was much preparing to do to make it just perfect.  The day before Thanksgiving I was blessed to have my children home and what a blessing it was.  I decided to give them cooking lessons. Considering that my oldest is 15 and I don’t want him to grow up and be a helpless man in the kitchen 🙂 I figured what better time than now!  We had a great time preparing dishes for the big meal. 

My oldest son prepared the stuffing, baked a pie and learned how to make the time honored tradition of twice baked potatoes.  It was so cute watching him in the kitchen.  Things that we all take for granted as a “no brainer” aren’t always that for kids.  I asked him to scrub the potatoes while I ran to the meat market to pick up the turkey.  Forty five minutes later he was still scrubbing them!  He thought that you needed to get every dark spot scrubbed off!  They were the cleanest twice baked potatoe ever!  Later in the day I found him trying to “grind” a teaspoon of salt into a measuring spoon.  Half of it was on the counter the other half in the spoon.  He said he had no idea that we even had table salt in a container :). 

My daughter was the queen of making the pumpkin dip, chopping the vegetables for the stuffing, the yogurt pie and the molasses cookies.  She has become quite the baker for a 13 year old  she could give Rachel Ray a run for her money.  Although, She did make me laugh when she was making the pumpkin dip.  She was chopping the green onions in perfectly uniform sizes and I then explained that they did not have to be perfect that all she needed to do was chop them.  She stated that “There’s no way that pumpkin dip can taste good so it darn well is going to look good”.  That’s my little perfectionist for you!

My youngest is nine and he helped scub potatoes and make the pumpkin bars.  He didn’t last long in the kitchen but he sure did enjoy spending time with the family.  He just loves it when we are all together.

Thanksgiving day was a success.  It was so much fun spending time with my family.  At one point I looked around the table to see everyone laughing and just thought “this is what it’s all about”.  This is why we work hard and spend several of our days preparing for a holiday.  Spending time with family and creating wonderful memories for my children is what it’s all about!  This is what I’m thankful for!!!
